Apple Coleslaw

3 cups shredded cabbage
2 cups thinly sliced unpeeled apples
1/2 cup golden raisins
1/2 cup light mayonnaise
1/4 cup light sour cream
More mayonnaise and salt may be added as needed.
Apple Pecan Crisp

Combine:
1 cup flour
1 1/2 cups brown sugar
1/2 cup pecans
1/2 cup rolled oats
1 tsp. nutmeg
1 stick butter, softened
Use your fingers to form crumbs. Place eight sliced, peeled apples in a buttered baking dish. Top with crumb mixture. Bake at 375 degrees for 45 minutes.

Sweet Potatoes

1/2 cup Karo Light Corn Syrup
3 Tbsp. butter or margarine
1 Tbsp. corn starch
1 tsp. salt
1/4 cup brown sugar
1/2 tsp. cinnamon
1 (40 oz.) can cut sweet potatoes, drained
Stir; syrup, butter, corn starch,, salt, brown sugar, and cinnamon over low heat until smooth. Place sweet potatoes in shallow 1 1/2-2 quart baking dish. Pour evenly over sweet potatoes, syrup mixture. Bake at 350 degrees for 30 minutes. Prep: 10 minutes; bake: 30 minutes; yield: 4 to 6 servings.
Quick Chicken Pot Pie

Butter casserole dish and mix up following ingredients for pot pie:
2 chicken breasts, cut up
2 boiled eggs, sliced
1/2 cup carrots
1/2 cup peas
1 can Cream of Chicken Soup
1 can chicken broth
Salt and pepper to taste
Crust:
1 1/2 cups biscuit mix
1 cup milk
Whisk together and pour over pot pie ingredients. Pour 1 stick melted butter on top of crust. Bake at 350 degrees for 30-35 minutes.

4 1/2 cups corn flakes
1 cup white sugar
1 cup white syrup
1 1/2 cups peanut butter
Combine syrup and sugar in a saucepan and boil for 2 minutes. Put peanut butter on top of corn flakes. Pour hot syrup over corn flakes and peanut butter. Stir up well. Place by tablespoonfuls on wax paper and let set over night. Peanuts can be added if you like.
Oatmeal Cranberry White Chocolate
Chunk Cookies

2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups Old fashioned oats
1 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
16 oz. pkg. Craisins dried cranberries
2/3 cup white chocolate chunks or chips
Preheat oven to 375 degrees. Use electric mixer and beat butter or margarine and sugar together until light and fluffy. Add eggs; mix well. Combine oats, flour, baking soda and salt in separate bowl. Add to butter mixture in several additions. Mix well. Stir in dried cranberries and white chocolate chunks. Drop by rounded teaspoons onto ungreased cookie sheets. Bake 10 to 12 minutes or until golden brown. Cool on wire rack. Makes approximately 2 1/2 dozen cookies.
