Cleaning Solution for Burnt Pots

Put 2 tablespoons vinegar with some water in the burnt pot and place back on stove and let boil for a few minutes. This will make the burned food come loose and it will smell clean also.
County Fair Funnel Cake

2 eggs, lightly beaten
1 1/2 cups milk
1/4 cup packed brown sugar
2 cups all-purpose flour
1 1/2 tsp. baking powdeer
1/4 tsp. salt
Oil for deep frying
Confectioner’s sugar
In a bowl, combine the eggs, milk and brown sugar. Combine flour, baking powdeer and salt; beat into egg mixture until smooth. In an electric skillet or deep fryer, heat oil to 375 degrees. Cover the bottom of a funnel spout with your fingers; ladle 1/2 cup of batter into funnel. Holding the funnel several inches above the skillet, release finger and move the funnel in a spiral motion until all the batter is released. Fry for two minutes on each side until golden brown. Drain on paper towels. Repeat with remaining batter. Dust with confectioner’s sugar. Serve warm. The batter can be poured from a liquid measuring cup instead of a funnel.
Homemade Pancakes

2 cups self-rising flour
2/3 cup milk
1 tsp. sugar
1 tsp. vanilla
1 egg
Mix egg, milk and vanilla and sugar until well blended. Then add flour. Mix with wire whisk. Fry in hot grease instead of vegetable oil.
Fat-Free Salad

1 can Eagle brand fat-free milk
1 large fat-free Cool Whip (16 oz.)
1 large can crushed pineapple, in heavy syrup
4 Tbsp. lemon juice
1/2 cup pecans
Mix all ingredients together ending with Cool Whip and pecans.
Chili Potatoes Casserole

1 lb. hamburger
15 oz. can kidney beans
1 tsp. chili powder
1 box cheese potatoes
1/2 green pepper
Saute onion and green pepper. Brown hamburger and drain. Add kidney beans to hamburger; do not drain beans. Put potatoes in a casserole dish. Add cheese sauce to potatoes. Add 2 1/2 cups water and add rest of ingredients to casserole. Bake covered at 400 degrees for 40 minutes, stirring once in the middle of baking time. Done when potatoes are tender.
Ranger Cookies

1/2 cup margarine
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/4 tsp. baking powder
1/4 tsp. salt
1 cup corn flakes
1/2 cup coconut
1/2 tsp. vanilla
1 cup flour
1/4 tsp. baking soda
1 cup oats
Mix margarine, sugars, egg and vanilla together. Add remaining ingredients and mix. Drop by teaspoonfuls onto a cookie sheet. Bake at 350 degrees for 10 minutes.
Megan’s Homemade Pizza
Crust:
2 1/2 – 3 cups flour
1 1/2 tsp. sugar
2 tsp. salt
1 pkg. dry yeast
1 cup very hot tap water
2 Tbsp. salad oil (I use Extra Virgin Olive Oil)
In a large bowl, mix one cup flour, sugar, salt and undissolved yeast. I usually use a wire whisk. Gradually add the water and oil, the beat adding enough additional flour to make a soft dough. Turn out onto a lightly floured surface and knead until smooth and elastic. Place in a greased bowl, turning to coat, cover and let rise about 45 minutes. Punch down (divide in half for two small pizza pans, but I usually just make one large pizza) and press into a greased pizza pan making a standing rim of dough. I use a Pampered Chef pizza stone. No second rising, just fill and 350º for 30-35 minutes.
When I make homemade pizza I usually make all different varieties. Really depends on what I have in the fridge. Here are some of the ingredients I use:
hamburger, sausage, chicken, ham, pepperoni, bacon, banana peppers, onions, green peppers, olives, sun dried tomatoes. The choices are endless. Sometimes we have just pepperoni and onions. It really depends on what’s available.
I usually cook my crust until it’s almost done then add on my pizza sauce. I precook all the toppings and place them on along with the sauce. Cover with pizza cheese or mozzarella and finish baking. This is always my go-to recipe when someone is coming over. It’s never failed me yet!
