It’s been said that breakfast is the most important meal of the day.
When I was growing up my Mom cooked breakfast several times in the morning. She ran a quick-order kitchen of sorts. I can remember she would get my older brother up for work and cook his breakfast and pack his lunch. Then by the time she would get the table cleared it was time to get Dad up and fix his breakfast and get him off to work. I can remember she would fix meat, potatoes and/or eggs and biscuits or maybe toast. Sometimes she would fry chicken or even pork chops for breakfast. Nothing was too good for her gang.
By this time I’m sure she wanted to kick back and prop up her feet, but she never did–she didn’t have time–it was time for the third shift to rise and shine from their slumber. That’s when we kids would get up and get ready for school. Well…time to cook again.
I can remember one of my brothers would eat oatmeal every day for breakfast. For the life of me I don’t know how he could do that. Give me oatmeal in a cookie or cake, but not hot in a bowl–ugh!
My younger brother, Gayle, liked bacon sandwiches. He liked his bacon cooked until it was burned black and crumbled into ashes. Boy, that sure did smoke up the kitchen.
Me? I never cared much for breakfast foods. Just give me a piece of toast or a donut (which we rarely got).
After I got married and had children of my own I began the same routine as my mother had done. I would get up early and fix breakfast and lunch for my husband, Jim, to go to work. I made biscuits and the whole nine yards. My kids liked French toast, and donuts made from canned biscuits. They were easy to please for their breakfast. I usually ate what ever Jim or the kids left on their plate. After all, times were hard, and I also didn’t want to make anything special for myself.
Now I rarely ever cook breakfast. We usually do fast food or donuts or something at home. But, Little Debbie Cakes recently came to the rescue–they started making muffins–they are great for breakfast! Leave it to Debbie to solve our problems.
